Liz Lombardo Stark Liz Lombardo Stark is the Director of Marketing & Public Relations at Gibsons Restaurant Group (GRG) as well as a member of the family that owns and operates the group. GRG is the founder of Gibsons Bar & Steakhouse, Hugo’s Frog Bar & Fish House, LUXBAR, Quartino Ristorante & Wine Bar, and Gibsons Italia. In addition, GRG manages premier organizations, including RL Restaurant in Chicago on behalf of Ralph Lauren and ChiSox Bar & Grill on behalf of the White Sox Organization. Most recently Gibsons Restaurant Group partnered with the José Andrés Group to open Bazaar Meat and Bar Mar in Chicago. Born and raised in the Chicagoland area, Liz was immersed in the hospitality industry at an early age. She has many fond memories from within the walls of her family-owned establishments, Gibsons and its predecessor, Sweetwater. Fascinated by the atmosphere, she developed a fondness for the energy of a restaurant and a respect for the importance of hospitality. She formally joined the family company in 2014. In October 2017, Liz opened Gibsons Restaurant Group’s first downtown restaurant since 2005 with her siblings and father, Steve Lombardo. Gibsons Italia, is a three-level modern Italian steakhouse in the West Loop. Liz currently sits on the boards of the Illinois Restaurant Association and Choose Chicago. She is also actively involved with Misericordia, hosting an annual Candy Days fundraising event. In addition, Liz and her family support Catholic Charities with an annual Gibsons luncheon providing a delicious traditional Gibsons meal for over 400 residents of Catholic Charities along with gift bags filled with basic necessities. When Liz isn’t working, you can find her spending time with her family and dining out with her husband at Chicago’s many restaurants. |
