Chef Hideaki Matsuo

Chef Hideaki Matsuo is the owner and Master Chef at "Kashiwaya" Restaurant in Osaka, Japan. Born in Takatsuki City, Osaka, Chef started practicing Japanese tea ceremony traditions while he was studying at School of Science and Technology of Kwansei Gakuin University. After graduating the university in March 1986, he started working at the long-established Japanese restaurant “Shofukuro”, which first opened in 1868. In 1989 he stated working at a Japanese restaurant that his father had run since 1977 (current “Kashiwaya”). In 1993, he became the master chef and renovated the restaurant which is currently Kashiwayato, which features a tea ceremony room. Kashiwaya was awarded three Michelin stars in Michelin Guide Kyoto Osaka Kobe in 2010, and joined Relais & Chateaux in November 2011.
He has committed to nurturing younger chefs and also teaches cooking and service skills at Japanese restaurants overseas.

His cuisine is essentially Japanese cuisine but he also employs western ingredients and western cooking methods, showing a strong balance of traditional and innovative.
