The modern, approachable fare created daily by executive chef  of Lettuce Entertain You Enterprises (LEYE) French restaurant Paris Club is a direct reflection of the visionary culinary talent’s youth in France and his American coming-of-age.

Growing up in the Vendée region of France - which sits just off the Atlantic Ocean on the country’s west coast - Ageneau first discovered his passion for cooking as a young boy, while assisting his grandmother in the kitchen. He pursued that calling, and in 1998, at the young age of 15, his culinary career “officially” began when he started working as an apprentice charcutier in a butcher shop near his hometown.
Ageneau finished culinary school at a small college in France and in 2001, moved to Chicago, accepting a position as a stagier under acclaimed chef Richard Liccioni at four-star restaurant Les Nomades. Chef Ageneau continued developing his skills, building an impressive resume by traveling the world and working under celebrated chefs including Pierre Gagnaire of Sketch in London in2003and Joachim Splichal of Patina in Los Angeles later that year.
In 2008, he was recruited by Wynn Resorts to serve as chef de cuisine for their newest property, Sinatra at the Encore Hotel in Las Vegas. Ageneau stayed there for two years before returning to Los Angeles in 2010 to work at The Royce as executive sous chef under the tutelage of David Feau.
In 2012, Chef Ageneau returned to Chicago and joined Lettuce Entertain You Enterprises French restaurant Paris Club as executive chef.
Ageneau says his work is infused with the two things that inspire him most – delicious aromas and indie rock music – and his favorite part of cooking is the creative process that drives the development of new dishes. When executing his vision, he reaches for seasonal, organic products produced by local farmers, and enjoys playing with spices from around the world. At Paris Club, Ageneau adds a personal spin on traditional French cuisine, creating lighter fare with a modern twist.
Ageneau currently resides in the West Loop neighborhood of Chicago. In his free time, he enjoys being outdoors and playing basketball.
