Shigeru Kitano


Born in Sapporo, Japan, SUSHISAMBA Chicago Executive Sushi Chef Shigeru Kitano came to the craft of sushi simply by loving it as a child.  “I remember enjoying the authentic flavors of sushi,” Chef Kitano explains.  “I always knew that I would follow in that great tradition when I grew up.” His journey to Executive Chef is noteworthy, having followed the arduous path of apprenticeship under five different Sushi Masters, where he learned precise technique and preparation. Behind the sushi counter at SUSHISAMBA, Chef Kitano is committed to Japanese tradition, while also embracing the creativity and energy of the brand, "I honor the history and pristine elements of sushi in my rolls, sashimi and tiraditos, but also enjoy the opportunity to offer an inventive take on this age-old cuisine to guests."
