An industry veteran for more than 30 years, Fox has been recognized as a noted expert in business strategy, concept creation, development, and expansion. He has developed a keen understand of the hospitality industry through his partnership and leadership with Lettuce Entertain You Enterprises in Chicago, Il, as well as his role as a Senior Vice President & Chief Operating Officer with Brinker International’s Maggiano’s Little Italy concept.
Fox studied at the prestige’s Culinary Institute of America in Hyde Park, NY, graduating with high honors at the top of his class in 1986. He has honed his cooking skills over his career by working at many respected restaurants, such as Le Francaise (Wheeling, IL), Printers Row (Chicago, IL), The Pump Room (Chicago, IL). Certified by the Court of Master Sommeliers, he has won numerous Wine Spectator Awards over the last several years.
He was a Chef Partner with Lettuce Entertain You Enterprises and the creator of numerous successful brands, including Maggiano’s Little Italy, Corner Bakery Café, Papagus Greek Taverna, La Madia, and Firecakes, all in Chicago, IL.
He founded 3Sixty Dinning Intelligence Management & Consulting LLC in 2007, and has built a national reputation for his company’s ability to guide and direct a range of expertise in culinary & beverage innovation, brand development, concept ideation and creation, business assessments and financial modeling, operating insights, menu design & creation, and people development.
