Matt Troost

Three Aces

Raised in upstate NY, Chef Matt Troost always wanted to be a chef. He started cooking in 1999 and later decided to get his culinary degree. After finishing classes at the Le Cordon Bleu academy at the Scottsdale Culinary Institute he went on to cook at the prestigeous Little Nell in Aspen, CO. After 4 years there he came to work in Chicago at the Peninsula Hotel and his first executive chef gig at Fianco. Now he is the executive chef at Three Aces.
