Pazzo's Cucina Italiana

Jose started working for Pazzo's in 1995 under Claudio Brusamolino, a classically trained chef from Northern Italy.   Jose was still in high school. The Aiyash family, owners of Pazzo's, saw potential in Jose and quickly promoted him from sauté cook, to sous chef within just three years. Jose worked with many other chefs at Pazzo's and assisted in opening several new Pazzo's locations. Pazzo's at 311 South Wacker caters to a particular clientle of brides and grooms for their grand occasions. Jose works with our catering manager to customize menus for many nationalities and requests. Pazzo's at 23E Jackson is his current location. He is gearing up to open the newest Pazzo's location at 101 North Wacker in Chicago. Jose is very creative and innovative in preparing his daily specials. Working with sauces and fresh fish is his passion. A simple Northern Italian pasta dish, he feels, is classic and timeless.
