Fogo de Chao
With over 19 years of Brazilian culinary experience, Irno Arosi is Fogo de Chão Chicago’s AGM and Lead Gaucho Chef. Irno was raised on a farm in Southern Brazil. He learned churrasco, the gaucho way of grilling meat over open pits of fire, at age 7 from his father.
In 1995 he moved from his family’s farm to the city of São Paulo where he secured a job as a dishwasher at Fogo de Chão. While there, Irno was promoted several times to positions throughout the restaurant. His experience earned him the opportunity to transfer to the United States as a gaucho chef in 2002.
Irno opened the Chicago Fogo in August of that year and, rising through the ranks, became the Assistant General Manager and Lead Gaucho Chef by 2010. Irno’s favorite meat is Fraldinha, a sirloin cut that’s distinctive and popular in Southern Brazil. Outside of work, Irno can be found spending time with his wife and children exploring Chicago.
