Melissa Trimmer


Melissa Trimmer, Executive Pastry Chef at C-House, Top Chef Master Marcus Samuelsson’s acclaimed restaurant located in the Affinia Chicago Hotel, infuses her passion for the sweeter things in life into each dish she creates. With a decade of culinary experience, Chef Melissa continually experiments with new recipes and brings creativity and a fresh approach to the dessert menu at C-House.

Chef Trimmer graduated from Johnson & WalesUniversity with an Associate degree in Baking and Pastry Arts in 2000, then took an internship at Confiseur Bachmann’s in Luzern, Switzerland. She has utilized her Swiss training and techniques in several roles throughout the Midwest; highlights include opening Bite, the bakery for The Gilmore Group in Grand Rapids, MI; bringing the pastry kitchen at Carnivale in Chicago to life; and leading the pastry department as Executive Pastry Chef when both Lula Café and Nightwood received the Bib Gourmand rating from The Chicago Michelin Guide’s inaugural edition in 2010. 
Chef Trimmer works closely with Nicole Pederson, C-House Executive Chef, to create desserts that complement the savory menu. Chef Melissa is passionate about sustainable food and focuses extensively on preserving the local bounty in jams, pickles and conserves. Chef Melissa thoroughly enjoys supporting the local farming community.
Chef Trimmer has received acclaim from top-tier Chicago publications including Chicago Magazine, The Chicago Tribune, The Chicago Sun-Times, Modern Luxury Magazine, and more.
