Venezuelan-born Chef Tony Castillo is the Executive Chef and Co-owner of Longitud315 in Highwood, IL. Chef Tony brings to Highwood and to all food lovers a fusion of South American flavors. With exotic Venezuelan, Argentinean, Brazilian, Ecuadorian and Peruvian flavors Chef Tony promises to liven up your dining routine. Chef Tony early and most fond memories are in his grandmother’s kitchen and cooking with her at a very young age. She taught him that cooking wasn’t about just creating a dish but good cooking comes from the heart; therefore, his love and passion for cooking which he transmits in every dish.
When Chef Tony turned 16, he moved to Mexico where some of his family resided and he worked in his parent’s restaurant helping in the kitchen where he mastered the arts of butchery. Chef Tony followed his love for cooking and began his formal culinary career in Guanajuato, Mexico at the recognized Institute of Culinary Arts and Gastronomy where he was awarded a scholarship to continue his culinary dreams in the United States.
Chef Tony has worked for recognized restaurants including Flat Top Grill, where he was able to hone his skills in Thai and Asian Cuisine. Most recently, Chef Tony was an Executive Chef for Guckenheimer Enterprises where he won Chef of the Year. Chef Tony also was very successful running his Catering business and creating unique and memorable customer events under Fusion of Flavors, LLC. At Longitud315, Chef Tony puts his passion for food and all his learnings into practice as he creates exquisite dishes where meats and seafood are real stars here as they are cooked with wood in an open flame grill and served in their entire succulent splendor. Chef Tony creates exquisite sauces including his well known signature Chimichurri Sauce and Plantain Chips, which recently won praise by the NS Modern Luxury Magazine as one of the “50 Must Try Tastes of the North Shore.” A tasty lineup of small plates and side dishes promises to satisfy all food enthusiasts and amateurs alike!
